Ingredients:
1 kg mutton, cut into medium pieces
2 large onions, sliced
4 cloves garlic, minced
2-inch piece ginger, grated
4 green chilies, slit
2 tomatoes, chopped
1 tbsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/4 tsp red chili powder (adjust to taste)
1/4 tsp garam masala
2 bay leaves
4-5 cardamom pods
2-inch cinnamon stick
1 tbsp ghee or oil
1 cup water or as needed
Salt to taste
Fresh coriander leaves, for garnish
Yogurt (optional), for serving
Instructions:
Marinate the Mutton: In a bowl, combine mutton pieces with turmeric powder, 1/2 tsp red chili powder, and salt. Mix well and marinate for at least 30 minutes, or preferably overnight in the refrigerator.
Sauté the Aromatics: Heat ghee or oil in a pot over medium heat. Add bay leaves, cardamom pods, and cinnamon stick. Sauté until fragrant.
Cook the Onions: Add sliced onions and cook until softened and golden brown.
Add Ginger-Garlic Paste: Add minced garlic and grated ginger. Sauté for a minute until fragrant.
Cook the Tomatoes: Add chopped tomatoes and cook until they soften and release their juices.
Spice Blend: Add coriander powder, cumin powder, remaining red chili powder, and garam masala. Sauté for a minute until fragrant.
Cook the Mutton: Add the marinated mutton pieces to the pot. Stir well to coat with the masala. Cook for 5-7 minutes, stirring occasionally.
Simmer: Add water or enough to cover the mutton. Bring to a boil, then reduce heat to low, cover the pot, and simmer for 1-1.5 hours, or until the mutton is tender. Stir occasionally and add more water if needed.
Adjust and Garnish: Once the mutton is cooked, check for seasoning and adjust salt and spices as needed. Garnish with fresh coriander leaves.
Serving Suggestions:
Serve hot with steamed rice, roti, naan, or jeera rice. Accompany with a dollop of yogurt for a cooling effect.
Tips:
For a richer flavor, use bone-in mutton pieces.
Adjust the spice level according to your preference.
You can add chopped onions and green chilies to the curry towards the end for extra flavor and heat.
For a deeper flavor, brown the mutton pieces lightly before adding them to the curry.
